Ingredients

For the banana bread:

  • 1 ¾ cups granulated sugar

  • 1 ½ teaspoons ground cinnamon

  • 1 teaspoon baking powder
  • 3 large eggs room temperature
  • 2 teaspoons pure vanilla extract
  • 4 overripe bananas mashed (about 2 cups)
  • 14 tablespoons unsalted butter melted, plus more for greasing pan
  • 1 ⅓ cups chopped walnuts or pecans

For the streusel topping:

  • ¼ cup light or dark brown sugar
  • ¼ cup all-purpose flour
  • ½ teaspoon cinnamon
  • pinch of kosher salt
  • 2 tablespoons unsalted butter room temperature

Instructions

  1. Warm the oven up to 350°. Set aside a loaf pan that is 10″ x 5″ x 3 ½” and grease it. I also like to put parchment paper around the edges of the pan to line it. This will make it easy to take the bread out of the pan.
  2. Mix the sugar, flour, baking soda, cinnamon, salt, and baking powder in a big bowl with a whisk.
  3. Beat the eggs and vanilla in a different big bowl, then mix them with the mashed bananas.
  4. Add the wet ingredients to the dry ones and mix them together until they are just mixed. The melting butter should be stirred in until it is fully mixed in. There are walnuts or pecans in the mix.
  5. Put the batter into the pan that has been made. Mix the brown sugar, flour, cinnamon, and salt together to make the crumb topping. Add the butter and mix it in with a fork until small bits form. Spread the crumb topping out evenly on top of the batter.
  6. It will take about an hour and ten minutes of baking in a hot oven until the loaf is golden brown and a cake tester stuck in the middle comes out clean. Let it cool down for 20 minutes before cutting it.
