  • 2 teaspoons baking powder

  • 1 teaspoon ground cinnamon
  • ¾ cup granulated sugar
  • ¼ cup unsalted butter (softened) or shortening
  • 1 large egg
  • 1 ½ teaspoons pure vanilla extract
  • ½ cup milk
  • 2 cups fresh blueberries

For the Streusel Topping:

  •  cup all-purpose flour
  •  cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 3 tablespoons cold unsalted butter cut into small pieces

Instructions

  1. Warm the oven up to 375°F. Use non-stick food spray on a 9-inch cast iron skillet or cake pan.
  2. Mix the flour, baking powder, salt, and cinnamon in a medium-sized bowl with a whisk. Put away.
  3. Put sugar and butter or shortening in a big bowl. Use an electric mixer on medium speed to mix them together. Keep mixing for about 3 minutes, or until the mixture is light and fluffy. Mix in the egg and vanilla until everything is well mixed.
  4. Lower the mixer’s speed to low and add the dry ingredients and milk to the sugar mixture one at a time, starting with the dry ingredients and ending with the milk. Mix each addition until it’s just mixed. Bring in the blueberries. Add batter to pan that has been made.
  5. To make the streusel topping, mix the flour, brown sugar, cinnamon, and salt in a medium-sized bowl. Using your hands, mix the butter pieces in until they make small clumps. Cover the batter with the covering.
  6. Set the oven to 400°F and bake for 40 to 45 minutes.
