  • 1 teaspoon baking soda

  • 2 eggs beaten
  • 1 ½ cups buttermilk
  • 1 tablespoon pure vanilla extract or vanilla bean paste
  • 4 tablespoons unsalted butter melted and cooled
  • Additional butter for prepping skillet or griddle

Instructions

  1. In a big bowl, use a whisk to mix the flour, sugar, baking powder, baking soda, and salt.
  2. In a different bowl or large measuring cup, mix the eggs, buttermilk, and vanilla. Mix them with a whisk. Use a whisk to mix it in until it’s almost all mixed in. It’s fine if there are some bumps. Do something else for 5 to 10 minutes while you heat up the pan or grill.
  3. Low heat should be used for a large pan or grill. After the pancake batter has had a chance to rest and the pan is hot, add the melted butter and mix it in with a whisk until it’s just combined.
  4. Put some butter on the hot surface where you will be cooking. Smooth out the butter with a paper towel and wipe off any extra. Using a ⅓-cup measuring tool, pour the batter into the pan. Watch out not to overcrowd the pan.
  5. Cook the pancakes over medium-low heat until bubbles form on top of them and pop. Flip the food over and cook for one or two more minutes to get both sides brown. Once more with the rest of the pancake mix.
  6. Get it warm and serve.
