Ingredients

  • 1 pound dried spaghetti or bucatini
  • 8 ounces guanciale, pancetta, smoked jowl bacon, or regular bacon cut into pieces
  • 1 tablespoon olive oil
  • 3 large whole eggs plus 2 egg yolks
  • 2.5 ounces grated pecorino Romano cheese
  • 1 ounce grated parmesan cheese
  • 1 teaspoon fresh cracked black pepper
  • ¼ teaspoon salt

Instructions

  1. Bring 4 quarts of very salty water to a boil in a big pot.
  2. Add the bacon, pancetta, or guanciale to a pan over medium-low heat. This will keep the food warm while the water heats up. Stir the meat around a lot as it cooks until most of the fat has been released and it is brown and crispy. Put the meat on a plate lined with paper towels after taking it out of the pan. Save the fat that has drained.
  3. When the water starts to boil, add the pasta and cook until it’s just al dente. This should take between 8 and 10 minutes, but check the box for specific instructions.
  4. In a bowl, mix the eggs, egg whites, and cheeses together with a whisk while the pasta cooks.
  5. Take out of the pot the cooked pasta and set aside 1 cup of the pasta water. Pasta should be put back in the pot. Toss the cooked guanciale, pancetta, or bacon with the pasta to coat it.
  6. Mix about ¼ cup of the hot pasta water slowly into the egg and cheese mixture. This will help the eggs settle down. Mix this with the pasta and toss it around until the sauce is smooth and shiny. If you need to, add more pasta water.
  7. Add the pepper and salt. Add more grated cheese, black pepper, and/or chopped parsley right away before serving.
