  • 12 ounces orecchiette
  • 2 tablespoons olive oil
  • 1 small white onion, diced
  • 3 cups fresh or frozen corn
  • ¼ cup white wine
  • 2 cups cream
  • 2 teaspoons mustard powder
  • ½ cup Parmesan cheese
  • ¼ cup fresh basil leaves, torn

Directions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add 2 tablespoons olive oil. Add onion and cook until softened and translucent, about 5 minutes.
  3. Add the corn and cook until kernels begin to soften, about 5 more minutes.
  4. Add the wine and cook until almost evaporated, about 1 minute.
  5. Pour in the cream and mustard powder.
  6. Simmer until thickened, about 7 minutes.
  7. Remove half the corn mixture to a blender and blend until smooth. Return to the pot.
  8. Stir in the Parmesan cheese along with the cooked pasta.
  9. Top with basil leaves and serve.
